Known for its intense flavours, colourful layout and variety of spices, Mexican Cuisine is increasingly popular in the UK. Its history lies in pre- Hispanic traditions dating as far back as Aztec and Inca eras combined with ingredients and trends that were introduced by Spanish colonists.

Foods like these tend to be very colourful because of the rich variety of vegetables (among them red peppers, green peppers, chillis, broccoli, cauliflower, and radishes) and meats in Mexican food. A good example would be quesadillas which are a flour or corn tortilla that is served with soft cheese and meats such as chicken, beef or pork alongside the peppers and other vegetables to give a vibrant taste and appearance.

This varied approach is enhanced further with some regional dishes taking on Caribbean and French influences as well as combing with the cuisine of the south west United States to form the ever popular 'Tex-Mex' style.
